Three Michelin-starred chef Niko Romito recently opened his namesake restaurant at the Bulgari Hotel Milano. Contemporary Italian cuisine is the underlying culinary concept embraced by the chef who takes diners on a sensory journey through the flavours of the peninsula. It is re-imagined without ever breaking from tradition. Romito’s dishes focus on lightness without sacrificing taste which, thanks to the use of prime quality ingredients and innovative culinary techniques, preserves their texture, and offers diners dishes that are colourful, explosive in flavour, multi-layered and exciting. “The idea of creating my own, uncompromising code of great contemporary Italian cuisine fascinates me: the chance of seeing it reach far and wide intrigues me,” says Romito. “I have always dreamt of captivating customers by serving them a superb dish of spaghetti with tomato sauce thousands of miles from my country.”
This time, however, the chef has brought his spaghetti with tomato sauce back home, a dish that he now serves in the magnificent setting of the Bulgari Hotel Milano, an exclusive, intimate space, set within a secret garden in the heart of the city. The menu features several of Romito’s signature dishes including Antipasto all’Italiana and ‘restructured’ versions of classics like lasagna, veal Milanese, homemade potato ravioli with red prawns and squid and tiramisu. The chef has also enhanced his offerings with several new recipes created exclusively for this restaurant
