A warm and cosy wood locale just steps from Corso Vercelli hosts Officina del Riso, a new gourmet destination where risotto and rice-based creations are the absolute protagonists. Born out of an idea by Luca Gruttadauria and Edoardo Maggiori, the restaurant conjures up the local tradition of risotto – in all its recipes and pairings – with the Japanese art of sushi making. Each and every creation is made with the use of a special Lomello rice which provides a soft and smooth texture to risotto without the use of butter for creaming, combined with top-quality ingredients to create innovative recipes. Even the Japan-style gunkan acquire a new meaning enhanced by Mediterranean flavours; highlights include the “Yume rice balls rolled in crispy bacom with a ceam of Roman pecorino cheese and egg yolk with pepper” or even a “Yume rice ball with Colonnata lard and honey topped with caramelized onion”.
