In the dehors or in the indoor dining room, seated at the social table or at the counter, Chef Paolo Bertin offers dishes inspired by tradition, but revisited in a contemporary key. Each week, in fact, the menu is designed according to the availability of ingredients declined in proposals always different. Chef’s prerogative, in fact, is to follow the seasonality and sustainability of raw materials, which are therefore always very fresh and vary according to the daily expenditure. From minestrone with fresh seasonal vegetables, to homemade tagliatelle with butter and black truffle, to rice with beet and Grana Padano, even simple dishes are designed with total respect for the ingredients. There is also no shortage of traditional Milanese dishes, such as veal ossobuco with mashed potato and gremolada or pork cutlet with roasted potatoes.
