Ernst Friedrich Knam, of German origins but baker in Italy since 1989, is ready to reopen his namesake pastry shop in Via Augusto Anfossi, nearby Piazza Cinque Giornate. After arriving in Italy, he was trained by chef Gualtiero Marchesi until 1992, when he opened his own pastry shop in the same position where it is today. Here soon became famous for experimenting with unusual pairings, almost all featuring chocolate as their main ingredient, until 2009/2010, when he was honoured with the title of Italian Chocolate Champion. In 2011 he was named Finger Food Champion and in 2012 he won the Gelato World Cup and began hosting the TV series “The King of Chocolate,” broadcasted in Italy by the channel Real Time.
As Expo Chef Ambassador, he has chosen this ingredient for the international exhibition, because – he declared – it’s healthy, it has different nuances and it “is all about passion and love and, what’s more, its’ a highly erotic ingredient.”
