Edomae with a view

A corner of Japan in Milan, where the traditional cuisine of Tokyo embraces contemporary influences, and typical oriental settings espouse the allure of Milan’s new skyline. Iyo Aalto, the new dining destination located on the first floor of Torre Solaria, is this and more. Here, two distinct gastronomic concepts come to life, a Sushi Counter inspired by the Japanese tradition of edomae zushi, and a Gastronomic Restaurant. The former, designed to seat just eight guests in its cozy, exclusive dining room, offers a typical omakase menu that includes ‘nigiri’ infused with seasonal ingredients as well as specialties that are either steamed or coal-grilled on a robatayaki. The dishes, prepared in front of the guests, carry the signature of Master Sushi Makers Masashi Suzuki and Luciano Yamashita, and are accompanied by a selection of wines, sakè and tea curated by sommelier Savio Bina.

The Gastronomic Restaurant

Alternatively, guests dining at the Gastronomic Restaurant can choose from among three tasting menus – Hitotoki, Yasuragi, Ukiyo – which, thanks to the creative flair of chef Domenico Zizzi, re-interpret traditional techniques and Japanese ingredients, including mentaiko, nagaimo, yuzukosho and wagyu, with a contemporary touch. The menu, a result of research and innovation, takes diners on a trip through the universe of Japanese and Italian flavours, enhanced with international influences.
